Grilled Shrimp Mango Salsa Avocado Toast
- 3 medium shrimp, peeled
- 4 teaspoons olive oil
- 1/4 cup mango, diced
- 1 tablespoon red pepper, diced
- 1 tablespoon green onions, chopped
- 2 teaspoons lime juice
- Salt, to taste
- 1 slice multigrain bread
- 1 package (2-ounce) WHOLLY® Chunky Avocado Mini
- Topping: Mango salsa, fresh cilantro
Toss 3 medium peeled shrimp with 2 teaspoons olive oil.
Grill over medium-high heat 4 minutes.
In small bowl, stir together ¼ cup diced mango, 1 tablespoon diced red pepper, 1 tablespoon chopped green onions, 2 teaspoons lime juice and 2 teaspoons olive oil. Season with salt to taste.
Spread 1 slice toasted multigrain bread with 1 (2-ounce) package WHOLLY® Chunky Avocado Mini. Top avocado with mango salsa, grilled shrimp and fresh cilantro leaves.
