Grilled Shrimp Mango Salsa Avocado Toast

  • 3 medium shrimp, peeled
  • 4 teaspoons olive oil
  • 1/4 cup mango, diced
  • 1 tablespoon red pepper, diced
  • 1 tablespoon green onions, chopped
  • 2 teaspoons lime juice
  • Salt, to taste
  • 1 slice multigrain bread
  • 1 package (2-ounce) WHOLLY® Chunky Avocado Mini
  • Topping: Mango salsa, fresh cilantro


  1. Toss 3 medium peeled shrimp with 2 teaspoons olive oil.

  2. Grill over medium-high heat 4 minutes.

  3. In small bowl, stir together ¼ cup diced mango, 1 tablespoon diced red pepper, 1 tablespoon chopped green onions, 2 teaspoons lime juice and 2 teaspoons olive oil. Season with salt to taste.

  4. Spread 1 slice toasted multigrain bread with 1 (2-ounce) package WHOLLY® Chunky Avocado Mini. Top avocado with mango salsa, grilled shrimp and fresh cilantro leaves.
