Chopped Tex-Mex Sandwich

Chop up meat, veggies and WHOLLY® Diced Avocado to form the perfect sandwich filler. This Tex-Mex Sandwich recipe is an easy, but hardy lunch or dinner.

- 1 large beefsteak tomato, sliced
- 1/2 small red onion, halved and sliced
- 4 slices deli sliced smoked ham
- 2 cups packed shredded iceberg lettuce
- 1/2 cup thinly sliced dry cured chorizo sausage
- 1/4 cup drained pimento stuffed olives
- 1/4 cup drained, sliced pickled jalapeños
- 1/4 cup fresh cilantro leaves
- 8-ounces WHOLLY® Diced Avocado
- 1/4 cup crumbled Queso Fresco
- 2 tablespoons jalapeño-lime vinaigrette
- 6 bolillo rolls
- 2 tablespoons Southwest chipotle ranch dressing
- Place tomato, onion, ham, lettuce, chorizo, olives, jalapeños and cilantro on large cutting board; chop.
- Add WHOLLY® Diced Avocado, queso fresco and vinaigrette; toss.
- Fill rolls with tomato mixture; drizzle with dressing.
