Chicken Fajita Stuffed Peppers

An easy weeknight chicken dinner favorite! Our Chicken Fajita Stuffed Peppers are packed with flavor and topped with our WHOLLY® GUACAMOLE Chunky.



  • 3 bell peppers, halved and hollowed
  • 3 tablespoons olive oil, separated
  • Salt and pepper
  • 1/2 pound chicken, cut into 1″ pieces
  • 1 fajita packet seasoning, separated
  • 1/2 cup diced red bell pepper
  • 1/2 onion, diced
  • 2 tablespoons minced garlic
  • 1 lime, juiced
  • 1 1/2 cups pre-cooked rice
  • 1/2 cup LA VICTORIA® Salsa
  • 1/2 cup shredded Mexican cheese
  • 1 1/2 cups shredded Pepper Jack cheese


  1. Drizzle bell pepper halves with 1 tablespoon olive oil and sprinkle with salt and pepper. Cook at 375° for 10 minutes. Remove from oven and set aside.
  2. Season chicken with half of fajita seasoning. In medium saucepan, heat 1 tablespoon olive oil over medium heat and cook chicken for 3-4 minutes, or until internal temperature reaches 165°. Remove chicken from pan and set aside.
  3. In same saucepan, add red bell pepper, onions and garlic in 1 tablespoon olive oil over medium-high heat. Add fajita seasonings and cook for 3-5 minutes or until onions are translucent.
  4. In large bowl combine rice with lime juice and vegetable mixture. Stir in chicken, salsa and shredded Mexican cheese.
  5. Stuff peppers with mixture and top each with Pepper Jack cheese.
  6. Cook at 375° for 20 minutes.
  7. Top with WHOLLY® GUACAMOLE Chunky and Pico de Gallo.
