Air Fried Potato Skins

Crispy potato skins, melted cheese, crunchy bacon and delicious WHOLLY® Guacamole. These are great for game day snacks or weekend apps!

- 4 small Russet potatoes, washed
- 2 tablespoons olive oil
- 2 teaspoons kosher salt or flaked salt
- 3/4 cup shredded cheddar cheese
- 1/3 cup chopped bacon
TOPPINGS
- WHOLLY® GUACAMOLE Classic
- 1/4 cup chopped chives
- Set air fryer to 400°.
- Poke holes in each potato, rub olive oil over each and sprinkle with salt.
- Cook in air fryer for 25-30 minutes.
- Remove potatoes from air fryer and let cool for a few minutes.
- Once potatoes are cool enough to handle, slice them in half longways.
- Scoop insides of each potato out, leaving a 1/4-inch border around the potato.
- Place potato halves, cut side up back into the air fryer. Brush the insides and the sides of each potato with a thin layer of olive oil. Air fry for 10 minutes.
- Fill each potato skin with 1 tablespoon of cheese and top with 2 teaspoons of crumbled cooked bacon. Air fry for 3 minutes.
- Remove from air fryer and top with WHOLLY® GUACAMOLE Classic, and green onions.
