Air Fried Potato Skins

Crispy potato skins, melted cheese, crunchy bacon and delicious WHOLLY® Guacamole. These are great for game day snacks or weekend apps!

Ingredients

  • 4 small Russet potatoes, washed
  • 2 tablespoons olive oil
  • 2 teaspoons kosher salt or flaked salt
  • 3/4 cup shredded cheddar cheese
  • 1/3 cup chopped bacon

TOPPINGS

  1. Set air fryer to 400°.
  2. Poke holes in each potato, rub olive oil over each and sprinkle with salt.
  3. Cook in air fryer for 25-30 minutes.
  4. Remove potatoes from air fryer and let cool for a few minutes.
  5. Once potatoes are cool enough to handle, slice them in half longways.
  6. Scoop insides of each potato out, leaving a 1/4-inch border around the potato.
  7. Place potato halves, cut side up back into the air fryer. Brush the insides and the sides of each potato with a thin layer of olive oil. Air fry for 10 minutes.
  8. Fill each potato skin with 1 tablespoon of cheese and top with 2 teaspoons of crumbled cooked bacon. Air fry for 3 minutes.
  9. Remove from air fryer and top with WHOLLY® GUACAMOLE Classic, and green onions.
