                           Vegan Mushroom Avocado Toast

An easy vegan recipe, perfect for breakfast or lunch! These mushroom avocado toasts have all the flavor and are topped with the perfect crunch.

- 2 Portobello mushroom caps
 - Olive oil spray
 - 1/2 teaspoon minced garlic
 - Salt and pepper
 - 2-ounces WHOLLY® Smashed Avocado
 - 1/3 cup halved cherry tomatoes
 - 1/3 cup dairy-free mozzarella cheese balls
 - 2 tablespoons deshelled and chopped PLANTERS® Dry Roasted Pistachios
 - 2 teaspoons vegan pesto
 
GARNISH
- Fresh basil leaves
 
- Spray both sides of mushrooms with olive oil and add 1 teaspoon of minced garlic to each, plus a pinch of salt and pepper.
 - Air fry at 375° for 7-10 minutes (do not flip).
 - Add WHOLLY® Smashed Avocado to each mushroom.
 - Top each with tomatoes, mozzarella, PLANTERS® Dry Roasted Pistachios and pesto.
 - Garnish with fresh basil leaves.
 
NOTE: Flip mushroom cap over so it forms a bowl. This is how you want to air fry it and top it.
